A painless and quick dish is how I would like to label it as.Yes, Omitar Khar,another favourite assamese cuisine of mine is something that can be cooked in any kitchen with the least effort involved and the most simple ingredients.

Omita means papaya in english and khar is a traditional liquid ingredient obtained by filtering water through banana peel ashes that can be substituted by edible soda,that's soda bicarbonate.Omita is my favourite but its not necessary for you to cook this dish with papaya too.It can be substituted by cabbage leaves or cucumber as well.


The method of cooking goes like this.Chopped raw papaya is stirred in a wok or kadhai with a very little amount of any oil(preferably mustard oil).Once they are tender,a dash of salt followed by 1/2tsp of khar or soda bicarbonate is added and cover cooked to get this energy efficient and cost effective yet delicious dish.
