This ambrosial Indian sweet called Sandesh in Hindi traces its origin to West Bengal(its place of birth), and also in Assam(my home town) where it is popularly known as Sondesh. Very easy to prepare,this sweet is readily available at every sweet meat stall in various types. Regular ones being prepared with curdled milk,white in colour,and Guror Sondesh which is prepared in winter with fresh date jaggery which brings out the brown colour in it.
The few ingredients that are required to prepare this jaggery sweet are:-
250 gms cottage cheese(paneer)
200 gms date jaggery
1/2 tsp cardamom essence or powder
a few raisins to garnish
Method:-
Mash ready made paneer(cottage cheese) or prepare paneer from milk at home by curdling it with acidic water or lime juice. Heat a pan, mix mashed paneer with date jaggery and stir continuously to make sure it doesn't get burned. When the gur (jaggery) has blended well,add cardamom powder or rose water. Bring it off the pan,let it cool and make lemon sized balls.Flatten a bit on palm and garnish with one raisin in the centre. Delicious Guror Sondesh is ready to serve.
